Ranch Dressing Mix Recipes

Beedigger's Classic and Chipotle Ranch Mixes are not for dressings and dip only!  Get creative and use them in your favorite recipes.  Here are a few to get you started!

*You can use either Classic Ranch Mix or Chipotle Ranch Mix in any of these recipes.  If you want to spice things up...use chipotle! :) 

 

RANCH PIMENTO CHEESE

INGREDIENTS:

2 teaspoons Beedigger’s Classic Ranch Salad Dressing Mix
                     (about half of one packet) 
7 oz vegan cheddar cheese, block style (Daiya works the best!!)
¼ cup + 2 tablespoons vegan mayonnaise (we like Vegenaise Soy Free)
¼ cup vegan sour cream (we like kite hill)
1/8 cup roasted red bell pepper, small dice
¼ cup pickled jalapeno (optional)
 
DIRECTIONS: 
  • Using a hand grater or a food processor, using the fine shredding blade, grate the cheese.
  • Add cheese, along with the rest of ingredients, to a medium size mixing bowl.
  • Using a spatula, mix pimento cheese well, kind of smooshing it down with the spatula to make it creamier.
  • Use as a dip, spread or an amazing pimento cheese sandwich!
  • Dig In! 

* We have tried every vegan cheese to make this…pre shredded, block style.  We found that Daiya Block Style Cheeses work the very best.…for this application!  They all work great with other recipes!! :)

* Most block style vegan cheeses come in 7 oz packages.  That is why we use 7 oz of cheese.  Just FYI.  (It's just kind of an odd measurement...haha)

CHIPOTLE RANCH MEXICAN STREET CORN

INGREDIENTS:

1 packet Beedigger’s Chipotle Ranch Salad Dressing Mix
2 – 15oz cans corn (approx. 3 - 3 ½ cups), drained and rinsed
¼ cup red onion, peeled and finely diced
½ cup vegan mayonnaise (we like Vegenaise soy free)
2 teaspoons lime juice, freshly squeezed
¼ cup vegan cheese, chopped into small dice…use your favorite!
2 tablespoons cilantro, finely chopped 
 
DIRECTIONS:
  • In medium size bowl add all ingredients.
  • Mix well and put into serving dish.
  • Dig in!

* If you don't like it spicy, use our Classic Ranch Dressing Mix!

GARLIC RANCH MASHED POTATOES

INGREDIENTS:

1 packet Beedigger’s Classic Ranch Salad Dressing Mix
2 pounds white or Yukon Gold potatoes, peeled and quartered
8 cloves garlic, peeled (you can use as much or as little garlic as you like)
1 cup almond milk, warmed, unsweetened…add more if needed
4 tablespoons vegan butter 
½ teaspoons + 2 teaspoons salt
½ teaspoon black pepper
2 tablespoons fresh chives, chopped (optional)
  
DIRECTIONS:  
  • In an 8 quart stock pot add potatoes, garlic and 2 teaspoons salt. Cover with cold water.  
  • Bring to a boil; reduce heat, cover and simmer until potatoes are tender, about 10-15 minutes. Drain well and return to the pot.
  • Add Beedigger's Classic Ranch Salad Dressing Mix, 1/2 teaspoon salt, pepper and butter.
  • Slowly add in warmed milk and blend with an electric mixer to desired constancy.
  • Do not over blend or potatoes will get gummy.
  • Transfer to serving dish and garnish with chives, if you would like.
  • Dig in!

RANCH PASTA ALFREDO

INGREDIENTS:

1 packet Beedigger’s Classic Ranch Salad Dressing Mix
8 oz bow tie pasta, dry
¼ cup vegan butter
2 teaspoons garlic, minced
8 oz cream cheese (we like kite hill)
½ - ¾ cup almond milk, unsweetened
½ cup vegan cheese shreds, any flavor works! (or 3 slices of sliced cheese, chopped)                   
¼ teaspoon black pepper
sea salt, to taste 
 
DIRECTIONS: 
  • Cook bow tie pasta according to package instructions.
  • While pasta is cooking, in a separate medium saucepan, heat to medium.
  • Melt butter. Add minced garlic and cook until fragrant, about 1 minute.
  • Add cream cheese and milk and stir until melted and smooth.
  • Add cheese shreds and Beedigger’s Classic Ranch Salad Dressing Mix. Stir until well combined and cheese has melted.
  • Drain pasta and stir into ranch alfredo sauce.
  • Turn off heat and mix well.
  • Dig in! 

**(start with ½ cup milk then add more for desired consistency)

CLASSIC RANCH PEA SALAD

INGREDIENTS:

1 packet Beedigger’s Classic Ranch Salad Dressing Mix
16 oz sweet peas, frozen
2 cups celery, diced
2 tablespoons red onion, minced
1 cup vegan cheddar, cubed
1 cup vegan mayonnaise 
2 quarts water
2 teaspoons sea salt 
 
DIRECTIONS:  
  • In a 4 quart sauce pan, add 2 quarts of water and salt. Bring to a boil.
  • Add peas.
  • Turn down heat and simmer until peas float to the top and are tender.
  • Drain peas through a colander and rinse with cool water.
  • Add peas to medium bowl. Add rest of ingredients and mix until well combined.
  • Refrigerate two hours or overnight for maximum flavor.
  • Dig in!

RANCH CUCUMBER SALAD

INGREDIENTS:

1 packet Beedigger’s Classic Ranch Salad Dressing Mix
2 pounds cucumbers (peeled, halved lengthwise, seeded and sliced into ¼ inch thick half moons)
1 cup red onion, thinly sliced
½ cup vegan mayonnaise
1 tablespoon apple cider vinegar
½ teaspoon salt
 
DIRECTIONS:  
  • Set a colander over a bowl and toss the cucumbers and the onions with a ½ teaspoon salt. Let drain for 1 hour.
  • Pour cucumbers and onions into a medium sized bowl and pat dry with a few paper towels or a kitchen towel. 
  • Add mayonnaise, Beedigger's Classic Ranch Salad Dressing Mix and apple cider vinegar.
  • Mix until well combined.
  • Serve immediately or refrigerate overnight.
  • Dig in!

RANCH COLESLAW

INGREDIENTS:

1 packet Beedigger’s Classic Ranch Salad Dressing Mix
8 cups cabbage, fine shred (about half a large head of cabbage)
1 cup carrots, fine shred
1 ½ cups vegan mayonnaise
½ cup sweet gerkin pickles, ground in food processor (about 8 gerkins)
                     or…1/2 cup sweet pickle relish
2 teaspoons pickle juice, from jar if using whole gerkins
1 teaspoons apple cider vinegar
½ teaspoon sugar, optional (if you like sweeter coleslaw) 
 
DIRECTIONS: 
  • Shred cabbage in a food processor using a fine shredding blade.
  • In a small mixing bowl add rest of ingredients and mix well.
  • In a medium bowl combine shredded cabbage and mayo mixture.
  • Mix until well combined.
  • Dig in!

CLASSIC RANCH DRESSING

INGREDIENTS:

1 packet Beedigger’s Classic Ranch Dressing Mix
1 ½ cups Vegan mayonnaise
½ cup water 
 
DIRECTIONS: 
  • In a medium bowl, or large measuring cup, add all ingredients.
  • Mix until well combined.
  • Chill at least one hour, or overnight.
  • Store in a dressing bottle or mason jar.
  • Dig in! 
  • PRO TIP!!  Hellmann's Vegan Mayonnaise gives this more of a buttermilk ranch flavor.  It's really good!  Try it! :)

CHIPOTLE RANCH DRESSING

INGREDIENTS:

1 packet Beedigger’s Chipotle Ranch Dressing Mix
1 ½ cups Vegan Mayonnaise
½ cup Water
 
DIRECTIONS: 
  • In a medium bowl, or large measuring cup, add all ingredients.
  • Mix until well combined.
  • Store in a dressing bottle or mason jar.
  • Chill at least one hour, or overnight.
  • Dig in!

CLASSIC RANCH OR CHIPOTLE RANCH DIP

INGREDIENTS:

1 packet Beedigger’s Classic Ranch Dressing Mix
OR
1 packet Beedigger’s Chipotle Ranch Dressing Mix
2 cups vegan mayonnaise
 

DIRECTIONS:  

  • In a medium bowl, or large measuring cup, add Classic Ranch or Chipotle Ranch and mayo.
  • Mix until well combined.
  • Chill at least one hour, or overnight.
  • Serve with chips and veggies you love for dipping. 
  • Dig in!
