Candied Ginger Cookie Mix

What you’ll need:

  • plant-based butter - 4 TBSP
  • water - 2-3 TBSP

Baking instructions: makes 12 - 14 cookies

  • heat oven to 350°
  • pour cookie mix into medium bowl
  • add melted butter, and water
  • stir until mix comes together
  • chill dough for 30 minutes
  • form 1’’ balls of dough, about 1 heaping TBSP
  • bake for 13-15 minutes
  • cool on baking sheet for 10 minutes before transferring to baking rack

  • depending on the butter you use, you may need more or less water. start with 1 TBSP of water and add more, one TBSP at a time, until dough forms into a ball.
  • mix cookie dough, pre-roll, cover and refrigerate overnight for next day ready to bake cookies.
  • if using a dark sheet pan, cook for 11-13 minutes. if using a light sheet pan, cook 13-15 minutes.
  • be sure to let the cookies rest 10 minutes on the baking sheet before moving.
